
Ghevar Aur Rabri
Rajasthani honeycomb ghevar under rabri, the Teej sweet that survives monsoon humour. Festival sweetness, made the slow way. Serve at room temperature, cut small — sweetness needs no size.

- Saffrona pinch, soaked in warm milk

Prep first: nuts chopped, pans greased, trays ready — this recipe rewards organization.

Combine the all-purpose flour with the ghee in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

Season the mix with the sugar and green cardamom, reserving some nuts for the top.

Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
