Imli Ki Meethi Chutney
Tamarind-date style chutney, the dark sweet drizzle that finishes every chaat. The condiment that carries the meal — bright, punchy and made in minutes. Serve with idli, dosa, rice or anything that needs waking up.
Ingredients
- Saltto taste
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies1 tsp
- Asafoetidaa pinch
- Tamarind Paste2 tbsp
- Roasted Cumin1 tsp
- Coconut Oil1 tbsp
- Jaggery3/4 cup, grated
Instructions
- 1
Chop, measure and line up; the cooking part is over before the radio finishes a song.
- 2
Briefly warm the jaggery in a dry pan until the kitchen smells like it means it.
- 3
Grind the tamarind paste with the jaggery, tamarind, green chilies and salt to a texture you like — smooth or rustic.
- 4
Taste and adjust — salt, sour, heat; chutney should be slightly louder than the dish it accompanies.
- 5
Finish with a sizzling tempering: mustard seeds, curry leaves and dried red chilies poured over the top; stir in only at serving.
Chef's tip
Tamarind too sour? A spoon of coconut milk calms it.
