Nariyal Ki Hari Chutney
Coconut-coriander green chutney, the South Indian idli-dosa partner. The condiment that carries the meal — bright, punchy and made in minutes. Keeps three days refrigerated; tempering on top keeps it fresher.
Ingredients

- Fresh Cilantro1/2 cup, chopped
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies2
- Asafoetidaa pinch
- Lemon1
- Tamarind Paste1 tbsp
- Coconut Oil1 tbsp
- Grated Coconut1 cup

Chop, measure and line up; the cooking part is over before the radio finishes a song.

Briefly warm the fresh cilantro in a dry pan until the kitchen smells like it means it.

Blitz the grated coconut with the roasted bits, tamarind and salt, adding water a spoon at a time.

Check the seasoning with a plain spoonful of rice; adjust till it pops.

Top with the fried mustard seeds and curry leaves; mix in just before serving for the aroma.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
