
Kaju Aur Anjeer Barfi
Dried-fig and cashew barfi, the no-sugar-syrup sweet of modern mithai shops. Ghee, sugar, patience — the three ingredients in every Indian celebration. Plate in petit-four pieces with tea or as prasad.
Ingredients

- Ghee3 tbsp
- Sugar1 tsp
- Cashews1/4 cup
- Green Cardamom1 tsp

Set out every ingredient measured and ready; Indian sweets move fast once the heat is on.

Start the base: the cashews and sugar together in a thick pan, stirring so nothing catches.

Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.

Season the mix with the green cardamom and green cardamom, reserving some nuts for the top.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
Chef's tip
Ghee should be fragrant but never browned past golden.
