
Tomato Aur Garlic Chutney
Fiery tomato-garlic chutney raw-blitzed, the Bengali kasundi-adjacent side. Small bowl, big personality. Serve with idli, dosa, rice or anything that needs waking up.

- Tomato3, chopped
- Garlic6 cloves
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies1 tsp
- Asafoetidaa pinch
- Tamarind Paste1 tbsp
- Mustard Oil1 tsp
- Coconut Oil1 tbsp
Instructions

Get everything ready: fresh coconut or the tomato prepped, spices within reach — chutney takes minutes.

Toast the garlic lightly for depth, or keep it raw for brightness — both are correct.

Pound or blend the tomato with chilies, tamarind and salt; the stone grinder texture is worth chasing.

Check the seasoning with a plain spoonful of rice; adjust till it pops.

Pour the crackling tadka over the chutney and leave it sitting on top like a crown.
Chef's tip
A pinch of jaggery rounds the heat beautifully.
