Kadhai Paneer Aur Bell Pepper
Kadhai paneer with thick pepper strips and crushed coriander seed. Mild spice, creamy depth and cubes of golden-white comfort. Best with something soft — malabar parotta is ideal.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter2 tbsp
- Kasuri Methi1 tbsp
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, pureed
- Ginger2-inch piece
- Green Chili1
- Turmeric Powder1/2 tsp
- Bell Pepper1, sliced
- Red Chili Powder1 tsp
Optional extras
- Heavy Cream2 tbsp
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Cube the paneer and keep it in warm water while the masala builds — this keeps it tender.
- 2
Brown the onions in butter, add the paste, and cook till the kitchen smells sweet and nutty.
- 3
Fry the tomato into the spices till it collapses and darkens a shade.
- 4
Stir in the bell pepper, lower the heat, and slide the paneer in with care.
- 5
Simmer three minutes — no more — finish with cream or crushed kasuri methi, and serve garnished with cilantro.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
