Paneer Aur Makhane Ki Sabzi
Paneer with fox nuts in light gravy, the fasting-friendly curry of UP banquets. The dish vegetarians order at restaurants and make better at home. Serve with naan, paratha or jeera rice.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter2 tbsp
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, pureed
- Green Chili1
- Turmeric Powder1/2 tsp
- Cashews1/4 cup
- Red Chili Powder1 tsp
- Makhana (Fox Nuts)1 cup
Optional extras
- Heavy Cream2 tbsp
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Slice the paneer thick enough to stay proud in the gravy; warm-soak and drain.

Brown the onions in butter, add the paste, and cook till the kitchen smells sweet and nutty.

Fry the tomato into the spices till it collapses and darkens a shade.

Stir in the makhana (fox nuts), lower the heat, and slide the paneer in with care.

Simmer three minutes — no more — finish with cream or crushed kasuri methi, and serve garnished with cilantro.
