Paneer Lababdar Restaurant Style
Paneer lababdar — the silkier, chunkier cousin of butter masala. The dish vegetarians order at restaurants and make better at home. Plate with buttered rotis and sliced onions.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter2 tbsp
- Tomato Puree400 g
- Heavy Cream1/4 cup
- Kasuri Methi1 tbsp
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, pureed
- Green Chili1
- Turmeric Powder1/2 tsp
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Slice the paneer thick enough to stay proud in the gravy; warm-soak and drain.

Heat butter or oil and fry the onions till golden; add ginger garlic paste and cook out the rawness.

Fry the tomato into the spices till it collapses and darkens a shade.

Add the tomato puree, then the paneer, and turn it through the masala with a flat hand.

Simmer three minutes — no more — finish with cream or crushed kasuri methi, and serve garnished with cilantro.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
