Thick saffron lassi served in clay kulhads, the Amritsar summer standard. Blender to glass in five minutes. Serve immediately, well chilled.

Ingredients

  • Yogurt2 cups, whisked
  • Saffrona pinch, soaked in warm milk
  • Sugar1 tsp
  • Green Cardamom1 tsp

Instructions

    Prep the yogurt and chill the serving glasses in the freezer.

    Combine the yogurt with the sugar in a blender or bowl.

    Blend high for thirty seconds; the texture should be thick and pourable.

    Add the saffron and pulse once — enough to scent, not to shred.

    Pour, garnish with the reserved spice or nuts, and serve ice-cold.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
