
Paneer Tikka Masala Dhaba
Grilled paneer cubes in dhaba-red gravy, the north Indian roadside standard. Soft paneer, rich masala — the vegetarian crown jewel. Plate with buttered rotis and sliced onions.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter2 tbsp
- Tomato Puree400 g
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, pureed
- Green Chili1
- Turmeric Powder1/2 tsp
- Red Chili Powder1 tsp
Optional extras
- Heavy Cream2 tbsp
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Cube the paneer and keep it in warm water while the masala builds — this keeps it tender.

Heat butter or oil and fry the onions till golden; add ginger garlic paste and cook out the rawness.

Tip in the tomato with the spices and bhunao till glossy, thick and clearly done.

Add the yogurt if using, then the drained paneer; fold gently — paneer breaks if bullied.

Rest off the heat, finish with the tomato puree, and serve while it's glossy.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
