
Classic Chocolate Fudge Cake
The three-layer chocolate cake every birthday deserves — deep cocoa, fudge frosting. The kind of simple, generous cake that disappears before it cools. Great as-is, or warmed for twenty seconds with a scoop of ice cream.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Dark Chocolate2 cups, chopped
- Cocoa Powder1/2 cup
Instructions

Preheat the oven to 175 C / 350 F, grease the tin and dust it so nothing sticks later.

Cream the butter, sugar and butter together until the mixture turns several shades lighter.

Fold the flour and cocoa powder through in two additions; overmixing makes a dense crumb.

Bake until the top springs back when pressed, 28-38 minutes depending on your tin.

Once cool, slice and serve, or ice it generously and let the frosting set.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
