Coffee Walnut Cake
Coffee sponge under coffee buttercream with walnut halves, the retro bakery staple. A tender, bakery-style crumb that stays moist for days. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients

- Salta pinch
- Eggs4
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Walnuts1 cup, chopped
- Instant Coffee2 tbsp

Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.

Whisk the butter, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Fold the flour and walnuts through in two additions; overmixing makes a dense crumb.

Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.

Level the top, pile on the frosting, and let it rest ten minutes before slicing.
