Black Forest Cake
Chocolate layers, whipped cream and drunk cherries — the Black Forest gateau in full. Deeply flavourful with a soft, even crumb and golden edges. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Heavy Cream1/4 cup
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Dark Chocolate2 cups, chopped
- Cherries1 cup, pitted
- Instant Coffee2 tbsp

Preheat the oven to 175 C / 350 F, grease the tin and dust it so nothing sticks later.

Whisk the heavy cream, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Fold the flour and cherries through in two additions; overmixing makes a dense crumb.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Once cool, slice and serve, or ice it generously and let the frosting set.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
