
Carrot Cake
Spiced carrot cake loaded with walnuts, crowned with tangy cream-cheese frosting. Deeply flavourful with a soft, even crumb and golden edges. Great as-is, or warmed for twenty seconds with a scoop of ice cream.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs3
- Carrot2, diced
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Cream Cheese1 cup, chopped
- Ground Cinnamon1 tsp
- Walnuts1 cup, chopped
Instructions

Set the oven to 180 C / 350 F and line the base of your tin with parchment.

Whisk the walnuts, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Fold the flour and ground cinnamon through in two additions; overmixing makes a dense crumb.

Bake until the top springs back when pressed, 28-38 minutes depending on your tin.

Level the top, pile on the frosting, and let it rest ten minutes before slicing.
Chef's tip
Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
