
Red Velvet Cake
Crimson crumb under cream-cheese frosting, the Southern cake that owns every February. Deeply flavourful with a soft, even crumb and golden edges. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs4
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Cream Cheese1 cup, chopped
- Buttermilk2 cups
- Cocoa Powder1/2 cup
Instructions

Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Fold the flour and buttermilk through in two additions; overmixing makes a dense crumb.

Bake until the top springs back when pressed, 28-38 minutes depending on your tin.

Once cool, slice and serve, or ice it generously and let the frosting set.

Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
