
Banana Bread
Overripe bananas' finest hour — a walnut-studded loaf that toasts beautifully next day. The kind of simple, generous cake that disappears before it cools. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Walnuts1 cup, chopped
- Brown Sugar1/2 cup
- Banana3, ripe and mashed

Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.

Whisk the brown sugar, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Level the top, pile on the frosting, and let it rest ten minutes before slicing.

Weigh your flour if you can; cup measures can be off by twenty percent either way.
