Victoria Sponge Cake
The afternoon-tea classic — vanilla sponge, whipped cream and berries in layers. A tender, bakery-style crumb that stays moist for days. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 cup, chopped
- Strawberries2 cups, hulled and sliced

Preheat the oven to 175 C / 350 F, grease the tin and dust it so nothing sticks later.

Cream the butter, sugar and butter together until the mixture turns several shades lighter.

Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.

Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.

Once cool, slice and serve, or ice it generously and let the frosting set.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
