Lemon Drizzle Cake

Preheat the oven to 175 C / 350 F, grease the tin and dust it so nothing sticks later.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Fold the flour and lemon zest through in two additions; overmixing makes a dense crumb.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.
