Orange Creme Caramel
Caramel custard brightened with orange zest, the citrus spin on flan. Silky and spoonable, with a clean, comforting sweetness. Lovely with a few berries or a thin biscuit on the side.
Ingredients

- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Egg Yolk2 cups, chopped
- Orange Zest1 tbsp

Chill your bowls and whisk if you are working with cream — cold cream whips better.

Warm the milk with the orange zest gently until steaming, not boiling, so the base stays smooth.

Beat the egg yolk and sugar together, then ease in the warm milk a little at a time.

Return to gentle heat and stir without stopping until it thickens enough to cloak the spoon.

Pour into dishes, chill at least four hours, and serve cold with sugar on top.
