
Pistachio Pudding Cups
Real pistachio pudding — nutty, pale green, nothing artificial about it. Silky and spoonable, with a clean, comforting sweetness. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Pistachios1/2 cup, chopped
Instructions

Chill your bowls and whisk if you are working with cream — cold cream whips better.

Combine the milk, heavy cream and sugar, stirring until dissolved, then take it off the heat.

Whisk the pistachios with the sugar, then temper with a ladle of the hot milk, whisking hard.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Divide between glasses, press clingfilm onto the surface, chill until set, then crown with milk.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
