Yogurt Honey Panna Cotta
Tangy yogurt panna cotta with honey drizzle, the lighter end to heavy meals. Smooth, wobbly and elegant — restaurant-simple, home-easy. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients
- Yogurt2 cups, whisked
- Heavy Cream1/4 cup
- Honey2 tbsp
- Salta pinch
- Milk2 cups
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Gelatin2 tsp
Instructions
- 1
Set out all ingredients and the serving dishes first; the cooking itself moves quickly.
- 2
Warm the milk with the honey gently until steaming, not boiling, so the base stays smooth.
- 3
Whisk the yogurt with the sugar, then temper with a ladle of the hot milk, whisking hard.
- 4
Return to gentle heat and stir without stopping until it thickens enough to cloak the spoon.
- 5
Divide between glasses, press clingfilm onto the surface, chill until set, then crown with gelatin.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
