Charcoal-kissed chicken skewers glazed with tare — salty-sweet izakaya skewers you can do under a broiler.

Ingredients

  • Chicken600 g thighs
  • Salt1 tsp
  • Spring Onions1 bunch, cut into 2-inch pieces
  • Soy Sauce1/4 cup
  • Sugar2 tbsp
  • Mirin1/4 cup
  • Sake2 tbsp

Optional extras

  • Neutral Oil1 tbsp
  • Black Pepper1/2 tsp

Instructions

    Cut chicken into even bite-size pieces; thread onto skewers with spring onion pieces.

    Mix soy, mirin, sake and sugar into a tare glaze; simmer until slightly thick.

    Grill or broil skewers, turning often, 8–10 minutes.

    Brush with tare in the last minutes so it caramelizes without burning.

    Serve with salt and extra tare.

Chef's tip

Even piece sizes cook evenly — mix big and small and some dry out while others stay raw.
