Kothamabri / coriander baath — emerald herb paste coating rice with coconut, green chili and a South Indian tempering.

Ingredients
- Saltto taste
- Ginger1 tsp
- Green Chili2
- Vegetable Oil2 tbsp
- Fresh Cilantro2 packed cups
- Rice3 cups cooked
- Urad Dal1 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Grated Coconut1/3 cup
Optional extras
- Lemon1 tsp optional
- Peanuts2 tbsp
Instructions

Blend fresh cilantro with coconut, green chili, ginger and a little water to a smooth paste.

Temper mustard, urad dal and curry leaves; sauté the paste briefly until the raw smell lifts.

Fold through cooled cooked rice with salt.

Add roasted peanuts or cashews for crunch.

Serve with raita or plain yogurt.
Chef's tip
Don't overcook the paste — you want the coriander bright green, not army drab.
