Bitter-sweet methi baath — fresh fenugreek leaves sautéed into a spiced rice. A Karnataka lunch-box classic that grows on you.

Ingredients
- Kasuri Methi1/2 cup fresh methi leaves packed (or 2 tbsp kasuri)
- Saltto taste
- Onion1, sliced
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Rice3 cups cooked
- Urad Dal1 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Red Chili Powder1/2 tsp
Optional extras
- Lemon1 tbsp
- Peanuts2 tbsp
Instructions

Wash methi leaves; chop. Cook rice; cool.

Temper mustard, urad and curry leaves; sauté onion and green chili.

Add methi; cook until wilted and the bitterness mellows, 6–8 minutes.

Season with turmeric, chili powder and salt; fold in rice.

Finish with a squeeze of lemon and peanuts.
Chef's tip
Sauté methi well — undercooked leaves taste aggressively bitter.
