Ingredients
- Ghee3 tbsp
- All-Purpose Flour2 cups
- Sugar1/2 cup + for dusting
- Peanut Oilfor deep frying
- Semolina (Rava)2 tbsp

Instructions

Boil sugar with water, milk and ghee into a light syrup.

Mix in flour and semolina; knead into a firm sweet dough.

Roll thick and cut into diamonds.

Fry on medium till deep gold.

Toss in extra sugar while hot if you like the crust thicker.
Chef's tip
Fry shakkarpara slowly — they must dry through, or the sugar crust turns chewy instead of crackly.
