Ratlam's notorious clove-hot sev — hotter, darker and more perfumed than any other sev in the Indian canon. Locals eat it straight by the newspaper cone; outsiders are warned.

Ingredients

  • Salt1 tsp
  • Asafoetida1/4 tsp
  • Gram Flour1.5 cups
  • Ajwain1/2 tsp
  • Red Chili Powder2 tsp
  • Peanut Oilfor deep frying
  • Cloves5, ground fine

Instructions

    Mix gram flour with ground cloves, red chili powder, asafoetida, ajwain and salt.

    Knead with water into a soft dough; rest 15 minutes.

    Press thin wires into medium-hot oil.

  4. 4

    Fry till the raw smell fades and the colour darkens.

  5. 5

    Cool; the clove heat builds as they sit.

Chef's tip

Use whole cloves freshly ground — bottled clove powder here loses the perfume that defines Ratlami.
