The flaky pastry flower of Marathwada — ghee-layered dough fried into puffed blossoms and dusted with cardamom sugar. Each layer shatters separately; that's the test.

Ingredients

  • Ghee4 tbsp, divided
  • All-Purpose Flour2 cups
  • Sugar1/2 cup, for dusting
  • Peanut Oilfor deep frying
  • Rice Flour2 tbsp
  • Green Cardamom4, powdered

Instructions

    Knead maida with ghee and water into a soft dough; rest 30 minutes.

    Make a rice-flour paste with melted ghee for layering.

    Roll thin sheets, smear with paste, stack and roll into logs.

    Slice and press each piece into flower shapes.

  5. 5

    Fry on medium-low till puffed pale gold; dust with cardamom sugar.

Chef's tip

The ghee-rice paste must be smooth as cream — grainy paste tears the layers.
