Ahmedabad's soft, pillowy sev — thicker, paler and gentler than bhujia, with black pepper doing a slow polite burn. The only fried snack Gujarati grandmothers call breakfast.

Ingredients
- Salt1 tsp
- Gram Flour2 cups
- Ajwain1/2 tsp
- Peanut Oil1 tbsp + for deep frying
- Black Pepper1 tsp, coarsely crushed
Instructions

Whisk gram flour with pepper, ajwain, oil and salt.

Knead soft dough with warm water; rest 10 minutes.

Press thick wires into hot oil in circles.

Fry briefly — gathiya should stay pale, not golden.

Drain; they soften a touch and that is correct.
Chef's tip
Gathiya is pale by design — colour means over-fried and hard; pull them early.
