Gujarat's fried bajra bread with methi and jaggery folded through — slightly sweet, deeply savoury, made to last the week. Eaten with white butter and pickles at any hour.

Ingredients
- Yogurt1/2 cup
- Kasuri Methi2 tbsp, crushed
- Salt1 tsp
- Peanut Oilfor shallow frying
- Sesame Seeds1 tbsp
- Jaggery1 tbsp, grated
- Pearl Millet (Bajra)1.5 cups
Instructions

Mix bajra flour, kasuri methi, sesame, yogurt, jaggery, oil and salt.

Knead to a firm dough; rest 20 minutes.

Roll or pat into thick small discs.

Fry on medium in ghee-oil till brown freckles appear on both sides.

Store in a tin once cool — they improve by day two.
Chef's tip
Bajra dough cracks when rolled — pat with wet palms instead of using a rolling pin.
