Puffed wheat puris laced with dried fenugreek and ajwain — the winter-morning puri that makes plain aloo sabzi feel like a festival. Puffs big, smells like a dhaba at dawn.

Ingredients
- Kasuri Methi2 tbsp, crushed
- Salt1 tsp
- Ghee1 tbsp
- Ajwain1/2 tsp
- Wheat Flour2 cups
- Peanut Oilfor deep frying
Instructions

Rub ghee into wheat flour with kasuri methi, ajwain and salt.

Knead a firm dough; rest 15 minutes.

Roll small discs slightly thicker than usual.

Fry in hot oil, pressing lightly till they balloon.

Serve immediately — puris wait for no one.
Chef's tip
Oil must be properly hot before the first puri goes in; lukewarm oil means flat, greasy puris.
