Bombay duck, the soft-boned fish that Mumbai's koliwadas rava-fry to a lace of gold. Universally loved, mildly feared by first-timers, gone in four bites.

Ingredients
- Ginger Garlic Paste1 tbsp
- Salt1 tsp
- Turmeric Powder1/2 tsp
- Lemon1, juiced
- Fish4 pieces, bombil (bombay duck)
- Red Chili Powder1.5 tsp
- Mustard Oilfor shallow frying
- Rice Flour1/2 cup
Instructions

Clean and split the fish; pat very dry.

Rub with turmeric, chili, ginger garlic paste, lemon and salt.

Coat thickly in rice flour.

Shallow fry in mustard oil on medium-high.

Fry till the crust crackles and the edges lace brown; serve with onion and lime.
Chef's tip
Dry the fish properly — bombil is wet by nature and wet fish steams instead of crisping.
