Tiny anchovies rolled in fiery masala and fried whole — bones and all — the way every Chennai kadal osai stall sells them by the heap. Crunchy, salty, impossible to share politely.

Ingredients
- Salt1 tsp
- Turmeric Powder1/2 tsp
- Lemon1, juiced
- Red Chili Powder2 tsp
- Coconut Oilfor deep frying
- Rice Flour1/3 cup
- Black Pepper1/2 tsp, crushed
- Sardines300 g, nethili (anchovies), cleaned
Optional extras
- Curry Leaves10
Instructions

Clean and dry the nethili thoroughly.

Toss with rice flour, turmeric, chili powder, pepper and salt.

Rest 10 minutes so the coating sticks.

Deep fry in coconut oil till the tails crisp.

Finish with fried curry leaves and lemon.
Chef's tip
Eat them whole — the tiny bones are the point, and they're soft enough after frying.
