Seer fish steaks in the classic Tamil fry marinade — thick, meaty, meaty-white fish with a cracked pepper crust that fish markets across the Coromandel coast fight over.

Ingredients

  • Salt1 tsp
  • Turmeric Powder1/2 tsp
  • Lemon1, juiced
  • Sesame Oilfor shallow frying
  • Red Chili Powder1.5 tsp
  • White Fish4 steaks, vanjaram (seer fish)
  • Rice Flour1/4 cup
  • Black Pepper1 tsp, coarsely crushed

Instructions

    Score the steaks shallowly so the marinade gets in.

    Rub with turmeric, chili powder, pepper, lemon, salt and a spoon of oil.

  3. 3

    Marinate 30 minutes.

    Shallow fry in sesame oil on medium till deep gold on both sides.

  5. 5

    Rest on a rack; serve with raw onion and lime.

Chef's tip

Sesame oil, not neutral oil — vanjaram fry without its nutty edge is just fried fish.
