Kerala's mackerel fry — whole scored fish in a roasted masala crust, fried in coconut oil till the house smells like the harbour. Lunch with matta rice and nothing else.

Ingredients

  • Salt1 tsp
  • Turmeric Powder1/2 tsp
  • Lemon1, juiced
  • Shallots4
  • Red Chili Powder2 tsp
  • Coconut Oilfor shallow frying
  • Mackerel2, cleaned and scored
  • Rice Flour1/4 cup

  • Curry Leaves10

Instructions

    Score mackerel on both sides.

    Blend turmeric, chili powder, shallots and salt into a thick paste with a little water.

  3. 3

    Rub the paste deep into the scores; rest 20 minutes.

  4. 4

    Shallow fry in coconut oil on medium till the crust blackens at the edges.

  5. 5

    Serve with lime and fried curry leaves.

Chef's tip

Don't move the fish for the first 4 minutes — mackerel skin sticks and then releases perfectly.
