Mirchi Vada
Jodhpur's stuffed chilli vada, fiery inside golden crust, best with imli chutney. Chaotic in the best way: every bite hits a different note. Best consumed within minutes — the crunch is the point.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Green Chili2
- Potato3 medium, cubed
- Lemon1
- Gram Flour1 cup
- Ajwain1 tsp
- Chaat Masala1 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Prep the components first — chopped onions, chutneys, spice mixes in reach — because street food waits for nothing.
- 2
Get the base going: crisp what should be crisp, soft what should be soft.
- 3
Spoon over the chutneys and yogurt in wide ribbons across the whole surface, not the middle.
- 4
Dust the spices from a height so they fall evenly, then bury it under the crunch.
- 5
Garnish with the potato, a final dusting of chaat masala and serve within minutes, eating straight from the plate.
Chef's tip
Assemble at the last possible second or the crunch dies.
