Mumbai Chana Jor Garam
Flattened fried chickpeas tossed loud with masala, the timeless stall snack. Chaotic in the best way: every bite hits a different note. Eat immediately, standing up, ideally with friends.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Green Chili1-2, finely chopped
- Chickpeas1 cup, soaked overnight
- Lemon1
- Red Onion1, thinly sliced
- Chaat Masala1 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Set out everything mise-en-place: this is assembly food, and it moves fast once you start.
- 2
Cook the base element — boil, fry or toast it — till it is exactly right; texture is the whole story here.
- 3
Build the moisture layer: green chutney at the edges, sweet tamarind in crosses, yogurt last.
- 4
Dust the spices from a height so they fall evenly, then bury it under the crunch.
- 5
Garnish with the chaat masala, a final dusting of chaat masala and serve within minutes, eating straight from the plate.
Chef's tip
Black salt (kala namak) is the secret edge; seek it out.
