Kolkata Egg Paratha Roll
Egg-glued paratha rolled around onion-lime, Kolkata street canon. The flavours of an Indian market at dusk, built on a plate. Serve in paper plates for the full street experience.
Ingredients
- Saltto taste
- Onion2, finely sliced
- Green Chili2
- Lemon1
- Eggs4
- All-Purpose Flour2 cups
- Chaat Masala1 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Set out everything mise-en-place: this is assembly food, and it moves fast once you start.
- 2
Cook the base element — boil, fry or toast it — till it is exactly right; texture is the whole story here.
- 3
Layer on the wet elements — chutneys, yogurt, gravies — generously; restraint is for restaurants.
- 4
Shower with the dry elements: chaat masala, roasted cumin, chili, and the crunchy topping — do this at the last second so it stays loud.
- 5
Garnish with the all-purpose flour, a final dusting of chaat masala and serve within minutes, eating straight from the plate.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
