Sprouts Chaat
Moong sprout chaat, the gym-friendly chaat that actually tastes good. Yogurt-flooded, chutney-streaked and unapologetically messy. Eat at once — chaat has a five-minute window of glory.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Lemon1
- Tamarind Paste2 tbsp
- Red Onion1, thinly sliced
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped

Get the base ready — cooked, cooled and ideally at room temperature so the toppings sit proud.

Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.

Layer the cooked base, then drizzle the green and tamarind chutneys in crossing lines.

Flood the plate with yogurt, then season hard — masala from a height falls evenly.

Top with the red onion, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
