Masala Bhutta
Coal-roasted corn rubbed with lime and chilli, India's original street BBQ. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Eat at once — chaat has a five-minute window of glory.
Ingredients
- Yogurt1 cup, whisked
- Butter3 tbsp
- Saltto taste
- Lemon1
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
- Roasted Cumin1 tsp
- Corn2 cups
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Get the base ready — cooked, cooled and ideally at room temperature so the toppings sit proud.
- 2
Sweeten and salt the whisked yogurt; street stalls lean sweeter than you'd think.
- 3
Arrange the base on the plate and spoon the chutneys across — green for bite, tamarind for sweetness.
- 4
Pour the yogurt over generously, then dust with chaat masala, roasted cumin and chili powder from a height.
- 5
Top with the lemon, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.
Chef's tip
Fry the base elements twice for maximum crunch.
