Paneer Tikka Chaat

Crisp-fried paneer cubes in chaat masala, protein with street swagger. Yogurt-flooded, chutney-streaked and unapologetically messy. Perfect as an evening snack with masala chai nearby.

Ingredients

  • Yogurt1 cup, whisked
  • Saltto taste
  • Paneer250 g, cubed
  • Lemon1
  • Tamarind Paste2 tbsp
  • Red Onion1, thinly sliced
  • Chaat Masala1 tsp
  • Red Chili Powder1/2 tsp
  • Roasted Cumin1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Get the base ready — cooked, cooled and ideally at room temperature so the toppings sit proud.

    Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.

    Arrange the base on the plate and spoon the chutneys across — green for bite, tamarind for sweetness.

    Flood the plate with yogurt, then season hard — masala from a height falls evenly.

  5. 5

    Top with the chaat masala, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.

Chef's tip

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
