Kachalu Chaat

Boiled taro cubes tossed in masala, Banarasi kachalu with tang. The plate where India keeps all of its favourite textures at once. Perfect as an evening snack with masala chai nearby.

Ingredients

  • Yogurt1 cup, whisked
  • Saltto taste
  • Lemon1
  • Tamarind Paste2 tbsp
  • Red Onion1, thinly sliced
  • Chaat Masala1 tsp
  • Red Chili Powder1/2 tsp
  • Roasted Cumin1 tsp
  • Taro (Arbi)300 g, boiled and peeled

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

    Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.

    Spread the base out flat and drag both chutneys across it in ribbons.

  4. 4

    Flood the plate with yogurt, then season hard — masala from a height falls evenly.

  5. 5

    Top with the chaat masala, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.

Chef's tip

A final squeeze of lemon or lime right before serving wakes up every other flavour.
