Pineapple rasam, sweet-sour innovation that became tradition. The Indian answer to soup night: shorba logic, butter texture. Serve hot with crusty bread or garlic naan.

Ingredients
- Butter2 tbsp
- Saltto taste
- Onion1, chopped
- Tomato3, chopped
- Garlic3 cloves
- Turmeric Powder1/4 tsp
- Curry Leaves2 sprigs
- Vegetable Stock4 cups
- Tamarind Paste2 tbsp
- Pineapple2 cups, chopped
- Black Pepper1/2 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Chop everything to a similar size so the simmer is even.

Melt butter in a heavy pot and soften the onions and garlic without colouring them.

Stir the pineapple and tamarind paste through the pot with the spices for a minute.

Pour in the stock, bring to a boil, then simmer covered 20 minutes till everything is spoon-tender.

Blend smooth (or leave rustic), adjust the seasoning, and serve hot with a swirl of cream and pepper on top.
Chef's tip
Blend hot but carefully — fill the jar only half full.
