
Milagu Rasam
Pepper rasam, the monsoon cold-cure of every Tamil household. The Indian answer to soup night: shorba logic, butter texture. Best with a drizzle of cream and warm bread.
Ingredients
- Butter2 tbsp
- Saltto taste
- Onion1, chopped
- Garlic6 cloves
- Turmeric Powder1/4 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Vegetable Stock4 cups
- Tamarind Paste2 tbsp
- Black Pepper1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Prep the vegetables and the yellow lentils (toor dal): washed, peeled and cut to even sizes.

Melt butter in a heavy pot and soften the onions and garlic without colouring them.

Tumble in the yellow lentils (toor dal) with the tamarind paste and spices; toast briefly in the butter.

Add the stock, boil, then lower to a murmur until the vegetables yield easily.

Blend till velvety, check the salt, and serve with cream swirls and crusty bread.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
