Drumstick rasam, moringa pods flavouring the sour broth. Velvet in a bowl — warm, gentle and quietly spiced. Best with a drizzle of cream and warm bread.

Ingredients

  • Butter2 tbsp
  • Saltto taste
  • Onion1, chopped
  • Tomato3, chopped
  • Garlic3 cloves
  • Turmeric Powder1/4 tsp
  • Curry Leaves2 sprigs
  • Vegetable Stock4 cups
  • Tamarind Paste2 tbsp
  • Black Pepper1/2 tsp
  • Drumstick (Moringa)2, cut in 3-inch pieces

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Prep the vegetables and the drumstick (moringa): washed, peeled and cut to even sizes.

    Melt butter in a heavy pot and soften the onions and garlic without colouring them.

  3. 3

    Tumble in the drumstick (moringa) with the tamarind paste and spices; toast briefly in the butter.

    Cover with stock and simmer gently; the spoon should slide through everything.

  5. 5

    Liquidise, loosen with stock if too thick, and finish with the tomato and cracked pepper.

Chef's tip

Blend hot but carefully — fill the jar only half full.
