
Dahi Bhalla Aur Pomegranate
Soft urad bhalle drowned in chilled yogurt, the Delhi chaat that opens every wedding buffet. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Serve immediately with small plates and no judgement.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Urad Dal2 cups, chopped
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
- Pomegranate Seeds1/2 cup

Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.

Spread the base out flat and drag both chutneys across it in ribbons.

Flood the plate with yogurt, then season hard — masala from a height falls evenly.

Bury it under the yogurt, add the jewelled garnish, and get it to the table while everything still crackles.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
