
Palak Chaat Crispy
Spinach leaves fried into glassy crisps then dressed like papdi chaat, the banquet invention. The plate where India keeps all of its favourite textures at once. Serve immediately with small plates and no judgement.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Spinach300 g, chopped
- Tamarind Paste2 tbsp
- Gram Flour1 cup
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Prep the crunchy and the soft components in separate bowls; assembly takes four minutes flat.

Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.

Layer the cooked base, then drizzle the green and tamarind chutneys in crossing lines.

Pour the yogurt over generously, then dust with chaat masala, roasted cumin and chili powder from a height.

Finish with the gram flour, a final pinch of black salt and serve at once.
