Mohanthal Gram Flour Fudge

Gujarati mohanthal with almond crown, the wedding-plate sweet of Surat. The taste of every good news day in an Indian household. Plate in petit-four pieces with tea or as prasad.

Ingredients

  • Salta pinch
  • Ghee3 tbsp
  • Sugar1 tsp
  • Gram Flour1 cup
  • Almonds1/4 cup, blanched and slivered
  • Green Cardamom4, ground

Instructions

    Measure everything before lighting the flame; there is no pause button mid-cook.

    Combine the gram flour with the ghee in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

    Keep going until the mass pulls away from the pan and glistens; the colour should deepen a shade.

    Add the sugar, cardamom and any nuts or saffron; fold through and cook two minutes more.

    Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
