Gond Ke Ladoo
Gond ladoo with fried edible gum pops, the Rajasthani winter-energy sweet for new mothers. Festival sweetness, made the slow way. Best after resting an hour; the flavours settle.
Ingredients
- Salta pinch
- Ghee3 tbsp
- Sugarto taste
- Wheat Flour3 cups
- Almonds1/4 cup, blanched and slivered
- Jaggery3/4 cup, grated
- Green Cardamom4, ground
Instructions
- 1
Prep first: nuts chopped, pans greased, trays ready — this recipe rewards organization.
- 2
Start the base: the wheat flour and almonds together in a thick pan, stirring so nothing catches.
- 3
Cook, stirring, until the mixture thickens and leaves the sides of the pan — 15 to 25 minutes of honest work.
- 4
Season the mix with the ghee and green cardamom, reserving some nuts for the top.
- 5
Spread or shape while warm, garnish with the reserved nuts, cool completely, then cut or serve as it sets.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
