
Kaju Ki Kheer
Whole-cashew kheer thickened with milk, the fasting-day dessert of North India. The taste of every good news day in an Indian household. Best after resting an hour; the flavours settle.

Combine the cashews with the milk in a heavy-bottomed pan and begin cooking over medium heat, stirring constantly.

Stir through the long middle stage until the mixture looks cohesive and smells toasty and rich.

Add the sugar, cardamom and any nuts or saffron; fold through and cook two minutes more.

Tip into a greased tray, level the top, sprinkle nuts, and let it set before cutting into diamonds.
