Almond milk boiled thick with saffron, the winter-evening cup of North India. The drinks that cool a subcontinent. Best on a veranda in May, frankly.

Ingredients

  • Saffrona pinch, soaked in warm milk
  • Milk1 litre
  • Sugar2 tbsp
  • Almonds1/4 cup, blanched and slivered
  • Green Cardamom1 tsp

Instructions

    Prep the milk and chill the serving glasses in the freezer.

    Combine the milk with the almonds in a blender or bowl.

  3. 3

    Blend or whisk until smooth and slightly frothy; taste for sweetness.

  4. 4

    Add the saffron and pulse once — enough to scent, not to shred.

  5. 5

    Pour over ice if using, dust with the garnish, and serve immediately in tall glasses.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
